The purpose of "honing" or "sharpening" is to produce a razor sharp edge on cutting tools. This requires the blade to be held on oil or grinding stones without deviating from the chosen angle.

Using Oilstones

There are several accepted methods of rubbing blades on oilstones,. This is best done with a firm grip on the tool blade and stiff wrists but bending at the elbows, all with the intention of maintaining the chosen angle and distributing the wear over the whole surface of the oilstone e.g.

The Straight method Rubbing back and forth working from one side to the other.

The circular method Using a circular motion whilst moving the blade up and down the stone.

The figure eight method By rubbing as per diagram.
